"My timeline got extended a bit, and my own project is now about six months to a year out," said Henderson of his venue change, "Colt & Gray was gracious enough to extend me an offer in the meantime."
Barman Kevin Burke looks forward to the experience Henderson will bring to the cocktail collaboration at the restaurant. "There's a right way to do things, and Mike does it the right way." he says, "He's never made me a bad cocktail, and he's got incredible, natural intuition. That's a testament to the professionalism of TAG's bar, and it reinforces what we already do at Colt & Gray."
Henderson joins a staff that includes another former member of TAG's team, Moe Elio, in manning what's quickly becoming one of the most serious beverage programs in Denver.
"We've got a bit of a dream team," says Henderson of his new gig, "I'm working with three of the most talented bartenders in town."
