No. 20: Colorado Striped Bass Crudo at Beatrice & Woodsley
     
     When you think about eating fish in landlocked Denver, you may not think about eating local fish — especially not raw local fish. One bite of chef Travis Messervey’s Colorado striped bass crudo at Beatrice & Woodsley, though, and all bets are off. This appetizer changes the game when it comes to fresh fish.
“Inspiration-wise, we try and stay as local and sustainable as we can,” says Beatrice & Woodsley’s general manager, Blake Manning. That’s why this eight-year-old restaurant gets its Colorado hybrid striped bass from the San Luis Valley, where they are raised in Alamosa by Colorado Catch, a family-owned company that produces around 350,000 pounds of bass each year. Though this swimmer is not caught wild, you would never think twice about the aquatic creature’s home once you try its moist, meaty and flaky white flesh, served thinly sliced and dressed in citrus juice. The dish also incorporates locally grown cantaloupe, seeded jalapenos, house-pickled radish, and pistou, a classic Provençal cold sauce made with garlic, olive oil and basil — though for this plate, Messervey substitutes cilantro.
Grab a table among the towering trees that decorate the forest-themed restaurant and pretend you caught the fish yourself on the banks of a Colorado creek and that Messervey, your own private chef, prepared the crudo for you fireside. As he whips up this tasty dish, he’ll regale your group with tales of cooking in San Francisco, the city he briefly left Denver for before returning to Beatrice & Woodsley in July. Then, ta-da, a plate of magical crudo appears that won’t readily disappear from your memory.
