Inside the creation you will find spicy scallop and white asparagus tempura, a lovely combination that gets topped with tender yellowtail belly, fresh avocado and a brushing of bright lemon. Well, kokoro, or heart, is the soul of the place, and the dishes are the bebop, a phrase that comes from a style of fast-paced jazz — but in Conwell’s sushi world, the word refers to how he interprets Japanese comfort and soul food. Hence, you have a pop-culture roll all about rebelling, harmonious ingredients singing together, and good taste in dress.
