In October, diners lost one of the best brunch spots in town when Fox Run Cafe ended its five-year run on East Colfax. It was a particularly hard hit for the block, which also lost two longtime staples around the same time with the closures of Enzo's End and Steve's Snappin' Dogs.
But now, the neighborhood has a new option to look forward to. After teasing an expansion, Bakery Four posted an announcement about its new location on January 22: "Some of you guessed right, but we’re taking over the former Fox Run space at 3550 East Colfax! We’re incredibly excited to bring our pastries to the east side of Denver. Thanks to our team and our customers that allowed us to make this happen! More details to come on opening as we go through permitting and such."
Shawn Bergin and his wife, Alex Urdanick, founded Bakery Four in 2020 a tiny spot in Highland that drew longer and longer lines each week. Two years later, it moved into an expansive new space at 4150 Tennyson Street, where it has continued to draw crowds that line up for its bread and pastries. It was also our 2023 Best of Denver pick for Best Bakery.
Last year, Bergin and Urdanick added a bagel shop, Rich Spirit, in Wheat Ridge.
The new East Colfax location is located directly across the street from another top local bakery, Good Bread, which also dishes out fresh baked bread and pastries in the mornings as well as pizza on select evenings.
Another addition is set to open soon, as Mama Jo's Biscuits & BBQ prepares to open in the former Steve's Snappin' Dogs space.
