No. 15: House-Smoked Pulled Pork Sandwich at the Universal
You'll find some of the best pulled pork in town in an unlikely location: nestled in a Sunnyside mini strip mall at breakfast and lunch spot the Universal. The origin of the dish stems from Seth Gray, the founding chef who helped open the restaurant and create the menu. He's long gone, but luckily for diners the sandwich stayed on , largely thanks to owner Steven Sharp, who has kept it a staple at this well-lit, roomy daytime eatery.

In fact, this southern-style restaurant has served the item since it opened in 2012, where it has remained one of the most popular items next to the Universal's famous grits and biscuits. The sandwich's consistent residency is for a good reason too; after all, to make this meaty wonder, the kitchen sticks to the North Carolina bible of barbecue pork.

To start with, the slow-roasted swine is smoked in-house, so it has the required charcoal flavor one craves when searching for tantalizing barbecue. The sauce proves bright and vinegary, the perfect tool to cut the pile of fatty, rich meat. To cool the heat, the dish, is topped with crisp Napa cabbage coleslaw, an addition that helps give the soft sandwich added crunch. Then, you have the buttery, griddled brioche bun, which soaks in the sauce and juices, completing the sandwich. Served with your choice of lemon-garlic potato salad, baked macaroni and cheese, collards or a whole slew of other tasty options, it's a lunchtime steal for $10.25.

Head here during the day and take a seat either next to the big, open windows surrounding the space or cozied up to the roomy, modern bar where you can watch your server pour beer and coffee while you wait for your food. Keep in mind, you can only get the sandwich for lunch, which is served from 11 a.m. to 2:30 p.m. Monday through Friday.

We're counting down the best dishes in the city in advance of Westword's Dish event on September 20 in Sculpture Park at the Denver Performing Arts Complex, where many of our Best of Denver winners — along with other favorites — will congregate to serve up small plates. If there's a dish you think we need to try, tell us about it in the comments section, or shoot us an e-mail at [email protected].
