100 Favorite Dishes: Deep Fried Cornbread at Sons of Scullery

Food at live-music venues is usually just an afterthought: overpriced fast food for a captive audience. But at Casselman's Bar & Venue in LoHi, the thumping music floating over Walnut Street has of late become mingled with wafts of wood smoke and the tangy aromas of barbecue. Mobile kitchen Sons of Scullery set up shop inside Casselman's earlier this year, serving ribs, brisket, pulled pork and other tasty bar bites.

Sides are part of the order with a platter of ribs or other meat combos, and the Sons are adept at all they offer. But for a special treat, ask for the fried cornbread. It's a thick square of moist cornbread that's been battered and fried to a golden crisp. If that's not enough, a pat of honey butter rests on top, quickly melting into the hot surface.

The batter itself is light and thin and fries up to a flaky finish — almost like the coating on good fried chicken. It's a savory-sweet bite so common on Southern plates, making it a reasonable stand-in for dessert. But topped with a few slices of pickled jalepeño (part of the standard barbecue presentation), the sweet heat and savory corn goodness combine for a tastebud-boggling trifecta of flavors. 

Sons of Scullery is no slouch at slow-cooked meats, either — and knows how to tempt the late-night crowds with over-the-top creations. For something even more outlandish, go all in on the Kraken, a monster of a sandwich piled with pork, brisket, housemade mac and cheese, and a multitude of Southern condiments.
