The simplicity of bruschetta is part of its charm — nothing but chewy, crusty bread and a few fresh ingredients to accompany a glass of wine or beer at happy hour, a light lunch or a shared dinner. Postino offers a dozen variations on the theme, most with no more than two or three toppings each.

The new LoHi wine bar's kitchen starts with a fat slice of bread from Denver's own City Bakery (a pleasant surprise, considering Postino's Arizona roots), warmed enough to offer a hint of crunch without toasting the soft bread all the way through. Our favorite tops that warm bread with an almost breakfasty combo of fresh Spanish sheep-milk cheese, layered with savory-sweet tomato jam. It's perfect for an 11 a.m. bite, just as the doors at Postino open, accompanied by a $5 glass of one of the bar's proprietary red wines (we won't tell if you don't).

If the tangy, almost caramelized flavor of tomato jam (made in-house since the restaurant's Italian supplier decided to retire) isn't your thing but you still like an early lunch, opt for a bruschetta capped with brie, fig spread and thin-sliced apple. Or for something a little more filling, there's a smoked-salmon-and-pesto version or a BLT-derived burrata, bacon, arugula and tomato combo. If you just can't decide, grab a friend or two and order a bruschetta board, which comes with four slices of your choice, each cut into four pieces for easy sampling. Buon appetito!
