Chef Matt Selby Tapped as Regional Executive Chef for Punch Bowl Social

Restaurateur Robert Thompson has spent the past four years growing his group of Punch Bowl Social restaurants in Colorado and beyond. With six of the gastro-tainment spots already offering food, bowling and booze in as many different states, and with several more planned for later this year and into 2018, PBS is expanding operationally, too, in order to fill new positions and maintain consistency across the brand. Thompson's latest addition to the team is longtime Denver chef Matt Selby, whom many know from his years at Vesta Dipping Grill.

Selby was hired as the new regional executive chef and will oversee culinary operations at the original Punch Bowl Social on Broadway as well the new Stapleton outpost, scheduled to open later this year. He'll also bring his years of training expertise to the team and train new executive chefs filling positions at future and existing PBS locations.
"I’ve known Matty for many years and have always admired his creativity and ability to motivate his teams," Thompson said in a PBS statement. "Matty will play a key role as we actively expand our culinary organization."

Selby was a mainstay at Vesta for fifteen years and was opening chef at Steuben's and Ace when Vesta owner Josh Wolkon unveiled those two 17th Avenue eateries. After leaving that group, Selby headed the kitchen at Corner House and then at Central Bistro & Bar before moving on to start his own restaurant consulting business (specializing in team training and motivation). Most recently, he was opening chef when Homegrown Tap & Dough debuted earlier this year in Olde Town Arvada.

Chef Sergio Romero, who has been with Thompson since 2009, will now become the company's regional operations director, sharing his culinary knowledge and leadership skills with the front of the house.
