100 Favorite Dishes: The Bacon Sandwich at Il Porcellino Salumi

Like Cured in Boulder, which landed at No. 8 on our list for its street-style pretzel dawg, Il Porcellino is a specialty market with a deli counter and a chalkboard list of sandwiches and other lunch and dinner eats made in-house. But the difference at the Berkeley palazzo of pork is that all the meats are made on-premises. Everything ground, stuffed, cured, smoked, aged, slow cooked or otherwise comes from the butcher shop and aging rooms at the back, which means every meat-based sandwich (Il Porcellino has vegetarian options, too) that's assembled and grilled up front contains something that was raised in Colorado and turned into salumi or charcuterie.

Or in the case of the bacon sandwich, Duroc pork belly is cured, smoked and turned into good old American bacon. Some folks like their bacon cut thick and fried to a crisp, but for this sandwich it's shaved thin and lightly cooked so that it remains tender and juicy, without becoming stringy or tough like inferior, mass-produced pork product tends to be.

The sandwich is built on jalapeño cheddar bread from the Grateful Bread Company and is stuffed with heirloom tomatoes and smeared with a touch of apple butter and aioli before being doused with pecora cheese fondue. A quick turn on the griddle adds crunch and a lightly dressed nest of arugula on the side adds bright and bitter notes to offset the richness of the sandwich. 

The house-made ingredients and locally sourced meats, bread and veggies combine in layers of satisfaction that instantly catapult Il Porcellino to Denver's top tier of sandwich makers. We can't wait to see what the tiny meat counter can do with the sopressata, Genoa, coppa, prosciutto and other dry cured meats that are currently hanging in a temperature- and humidity-controlled aging room, awaiting the perfect moment to become Il Porcellino's next great sandwich creation.
