100 Favorite Dishes: The Fried Chesapeake Oyster at Hideaway Kitchen + Bar

Head up Interstate 70 to Genesee Park (it won't take as long as you think) and then look for the shopping center tucked behind the Chart House. In the far corner, you'll see the Hideaway, looking more like a neighborhood bar from the outside than a place for destination dining. But inside, owner Alan Zizmor has created a warm and inviting eatery with a treasure trove of great wines and a creative roster of small plates and entrees from chef Nick Shankland. 

About 75 percent of Shankland's menu consists of appetizers — divided into Veg, Farm and Sea sections — as a way to make dinner into a social event where food can be shared with friends and family. One such dish, under the Sea heading, is a beautiful vignette featuring a fried oyster with several accoutrements. The chef is a fan of combining multiple disparate ingredients into one cohesive presentation, and this one's no exception.

The oyster, coated in a delicate golden crust, rests in its shell atop a spoonful of creamed kale and melted manchego. A ramekin of chorizo gravy sits alongside, separated by more crumbles of chorizo and a pool of buttery sauce. Fried oysters can become mealy and overly fishy if not cooked properly, but Shankland uses a light touch to crisp the coating while keeping the oyster at the perfect temperature so that it remains mild and smooth. Combining the gravy with the other ingredients gives the bite-sized portion an Iberian twist, reminiscent of Portuguese clam-and-chorizo combos or Spanish flavors that highlight the affinity between sausage and seafood.

The menu changes seasonally at Hideaway, so if you don't see this dish, check out any of the seafood specialties, each of which offers the same variety and symmetry without ever becoming muddled or overblown
